The Parisian in winter likes to snuggle up under an eiderdown in the company of a warm lover while her little husband has gone to chop wood in the Jardin du Luxembourg. She also likes to draw her energy from the Four Citrus from La Confiture Parisienne. Four? Yes, four, no less: orange to remain classic, grapefruit to explode into bitterness, clementine to correct grapefruit with a little sweetness and kumquat to shake this little world. Add to that a little cinnamon, vanilla, star anise and off we go to enjoy a totally revolutionary citrus jam while respecting the rules of jam making.
