Yellow Pepper from the Amazon - Colombia

Originally from Colombia, Amazon Pepper has the particularity of being harvested before its full maturity. This explains its yellow color, while most of its close cousins (such as cayenne pepper) are red! The purpose of this early harvest is to allow the Amazon pepper to develop fruity and tangy notes. With a score of around 50,000 on the Scoville scale (equivalent to 8/10), it is a pepper of character, which combines spice and aromatic qualities. Amazon pepper can be used whole, in a sauce for example, before being removed, or can be crushed and fully incorporated into your preparations.
